CHICKEN MAKHANI (BUTTER CHICKEN)
Butter chicken is mouth-watering, tender chicken, cooked in a spiced tomato sauce. It’s traditionally cooked in a tandoor (a cylindrical clay or metal oven), but may be grilled, roasted or pan-fried in less authentic preparations.
Always make the gravy by first cooking fresh tomato, garlic, and cardamom down into a bright red pulp. This pulp is then pureed after cooling. Then, the chef adds butter, various spices, and Khoa (dried whole milk).

Ingredients
for 4 servings
- raw chicken 400 gms
- For the Marinade:
- red chilli powder 2 tablespoons
- ginger and garlic paste 2 tablespoons
- salt 2 tablespoons
- lemon juice 2 tablespoons
- curd
- garam masala 1/2 tablespoon
- kasuri methi 1 tablespoon
- mustard oil , pureed 2 tablespoons
- For gravy:
- oil 2 tablespoons
- to taste butter 2 cubes
- Cloves 3 gram
- Cinnamon sticks, sliced 1
- Mace 1 tablespoon
- Cardamom 7
- Tomatoes, chopped 4
- garlic 1 tablespoon
- ginger 1 tablespoon
- butter cubes 2
- ginger garlic paste 1 tablespoon
- red chilli powder 1 1/2 tablespoon
- kasuri methi 1 tablespoon
- honey 2 tablespoon
- green chilli 1
- cardamom powder 2 tablespoons
- cream 1 tablespoon

Peparation of butter chicken
For marination:
Step 1 - In a mixing bowl, put raw chicken pieces and add salt, red chilli powder, ginger garlic paste and lemon juice. Mix well.
Step 2 - Refrigerate for about 15-20 minutes.Butter Chicken
Step 3 - Now add curd to the refrigerated mix. Followed by salt, ginger garlic paste, red chilli powder, garam masala, kasuri methi and mustard oil. Mix well and refrigerate again for an hour.
Step 4 - Roast the marinated chicken in an oven for about 30 minutes until it is three-fourth done.
Prepare the chicken gravy:
Step 1 - Heat 2 tsp of oil in a pan with butter.
Step 2 - Add cloves, cinnamon stick, mace and cardamom. Saute and then add chopped tomatoes, garlic and ginger. Mix well and then grind well.
Step 3 - In another pan, heat another two cubes of butter, along with ginger garlic paste.
Step 4 - Add the tomato puree made from the mixture. Now add red chilli powder, kasuri methi, honey and finally the roasted chicken pieces. Let it simmer.
Step 5 - Add green chilli, cardamom powder and cream. Mix well.
Step 6 - Serve with a teaspoon of cream over.
RECIPE NOTES
This is a classic chicken dish and enjoyed best when served hot. You can also garnish it with cream and green chillies just before serving.

You could make a vegetarian version of the dish by simple replacing chicken with pieces of paneer. Marinate the paneer for 5-6 hours too to ensure there is enough flavour in them before putting them in the oven or tandoor.
